Outrageous Chocolate Chip Cookies

1 cup butter
1 cup sugar
2/3 cup brown sugar packed
1 cup peanut butter
1 teaspoon vanilla
2 ea eggs
2 cups flour
1 cup quick oatmeal
2 teaspoons baking soda
1/2 teaspoon salt
12 ounces semi-sweet chocolate chips

Heat oven to 350?. Beat butter, sugars, peanut butter, vanilla and eggs vigorously in large bowl until creamy and well blended. Stir in flour, oats, baking soda and salt. Stir in chocolate chips. Drop dough by rounded tablespoonfuls about 2″ apart onto ungreased cookie sheet. Bake 12 min. or until golden brown. Cool 1 minute; remove from cookie sheet to brown paper. Makes about 4 dozen cookies.

1/2 cup butter softened
1 cup sugar
1 large egg
1 large egg yolk
1 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup lime juice
1 1/2 teaspoons lime zest
3/4 cup white chocolate chips

Cream butter, sugar, egg, egg yolk in a large bowl. Blend in flour, baking powder, salt, lime juice and lime zest. Fold in white chocolate chips. Roll dough into walnut sized balls; place on ungreased cookie sheet. Bake at 350? for 8-10 minutes.

Pasta Baked with Sausage, Tomatoes and Cheese

1 lb Pasta ziti short tubes or other kind
1 lb Hot turkey italian sausage
1 c Onion chopped
2 cloves Garlic minced
1 tablespoon Tomato paste
1/4 teaspoon Salt
1/4 teaspoon Black pepper
2 14.5 oz cans Petite-diced tomatoes undrained
1/4 c Basil chopped
1 c Mozzarella shredded
1 c Parmesan grated

Preheat oven to 350 degrees. Cook pasta according to package directions but omitting salt and fat - drain and set aside. Remove casings from sausage. Cook sausage, oninon, garlic in large nonstick skillet over med heat until sausage is browned and crumbles. Add tomato paste, salt, pepper, and diced tomatoes to pan and bring to boil. Cover, reduce heat and simmer 10 min, stirring occasionally. Combine cooked pasta, sausage mixture and basil. Place half of the pasta mixture in a 4quart casserole coated with cooking spray. Top with half of mozzerella and half of parmesan. Repeat layers. Bake at 350 for 25 min or until bubbly.

Fish - Broiled Red Snapper with Ginger-lime Butter

1 1/2 tablespoon Butter softened
1 tablespoon Cilantro chopped
1 teaspoon Jalapeno peppers minced, seeded
1/2 teaspoon Lime rind grated
1/4 teaspoon Ginger grated
3/4 teaspoon Salt
4 6oz Red snapper fillets
1/4 teaspoon Black pepper

Combine first 5 ingredients in bowl and stir in 1/4 teaspoon salt. Cover and chill. Heat large nonstick skillet over high heat. Sprinkle both sides of fish with remaining 1/2 t salt and pepper. Coat pan with cooking spray. Add fish to pan and cook 3 min on each side or until fish flakes easily with a fork. PLace fillet on plate and top with 1.5 teaspoon butter mixture.
